Wonderful Dessert Recipes:
Vanilla Pound Cake
- 1 cup butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 5 eggs
- 2 cups flour
- 1 teaspoon baking powder
Reserve two egg whites for icing. Cream butter, add sugar slowly, beating well. Add vanilla flavoring and yolks of eggs which have been beaten until pale yellow. Beat three egg whites until light and add alternately a little at a time with the flour which has been sifted with the baking powder. Mix well and bake in greased loaf pan in moderate oven about one hour. Cover with ornamental frosting made with the two remaining egg whites.

Icing can be formed into shapes such as flowers and leaves using a pastry bag. A pastry bag is an often cone- or triangular-shaped, hand-held bag made from cloth, paper, or plastic that is used to pipe semi-solid foods by pressing them through a narrow opening at one end. Aside from icings and frostings, pastry bags are commonly used to shape meringue and whipped cream, and to fill doughnuts with jelly or vanilla custard. Using icing to decorate cakes is commonly used with wedding cakes, anniversary cakes and birthday cakes.
Meringue Chocolates
- 2 eggs (whites),
- Pinch of salt,
- 4 level tablespoonfuls of sugar,
- 1 teaspoonful of Chocolate.
Add salt to eggs and beat in a large shallow dish with fork or egg-whip until stiff and flaky and dish can be turned upside down. Beat in the sugar slowly, then the chocolate, and beat until the dish can be turned upside down.
